Our oysters come straight from our very own Blue Island Shellfish Farm in New York’s Great South Bay, where they’re cultivated in pristine waters for unmatched freshness. Shellfish is delivered fresh from every harvest, ensuring you enjoy the finest oysters available. Founded in 1995 by diver Chris Quartuccio, Blue Island helped pioneer the Sea to Table movement, earning a reputation as one of the nation’s premier seafood purveyors, trusted by chefs, restaurants, and even the White House. Today we’re taking it a step further with our Dock to Dish approach: from our oyster farm to your plate, without compromise.
