September’s Chef & Shucker celebrates two of our favorite coastal indulgences with Butter & Brine — a lobster-kissed afternoon built around fresh oysters, rich butter, bright coastal flavors, and perfectly paired drinks.
You’ll taste and compare oysters from different waters while learning how growing region and merroir influence everything from salinity to sweetness. Then we’ll hand you a shucking knife and walk you through the technique to open them like a pro.
From there, Chef DJ takes over with a multi-course seafood tasting featuring touches of lobster, drawn butter, and seasonal coastal ingredients — without turning the afternoon into a lobster feast.
Expect crisp whites, bubbles, and a special butter-washed cocktail pairing designed for the occasion.

Stone crab season has arrived.
October’s Chef & Shucker brings together two Blue Island favorites: freshly shucked oysters and one of the most anticipated catches of the season.
Claws & Corks is a hands-on afternoon of oysters, crab, chilled seafood, and cocktails designed to celebrate the start of stone crab season. You’ll learn what separates oysters from different growing regions, how to taste for salinity, sweetness and minerality, and — most importantly — how to shuck your own.
Then Chef DJ will build on the experience with a multi-course tasting featuring seasonal seafood and touches of stone crab. And because cold seafood deserves an equally cold drink, expect thoughtfully paired wines alongside properly chilled gin and vodka martinis.

November’s Chef & Shucker takes our signature oyster experience into colder-weather territory with Smoke, Salt & Shuck — an afternoon of fresh oysters, smoky coastal flavors, roasted preparations, and richer seasonal pairings.
You’ll start at the shucking table, learning how oyster species, growing regions and merroir influence flavor before opening and tasting oysters yourself. Then Chef DJ turns up the heat.
The tasting explores oysters and seafood through smoked, roasted and baked preparations, bringing together brine, fire, sea salt and savory fall flavors. Pairings shift with the season too, with richer wines and a cocktail program inspired by whiskey, mezcal and smoke.

You’ll start at the shucking table, learning how oyster species, growing regions, and merroir influence flavor before getting hands-on and opening oysters yourself.
Then settle in as Chef DJ takes over with a multi-course seafood tasting featuring elegant seasonal touches, a little caviar, and flavors designed to pair beautifully with Champagne and sparkling wine.
Because the holidays deserve oysters — and one more glass.
